Long Tree BBQ Bacon Potato Salad

INGREDIENTS

Potato Salad:
5 Pounds of Yellow Potatoes (Scrub and Cut into Cubes)
1 Tablespoon of Salt
1 ½ Teaspoons of Fresh Ground Pepper
2 Tablespoons of Olive Oil
1 Pound of Cooked and Copped Bacon
2 Cups of Diced Celery
½ Cup of Chopped Scallions

Sauce:
1 ½ Cups of Mayonnaise
½ Cup of Lone Tree BBQ Sauce (Mild or Hot)
1 Tablespoon of Dijon Mustard
½ Teaspoon of Kosher Salt
¼ Teaspoon of Black Pepper

 

DIRECTIONS

Step 1 – Preheat oven to 400 degrees
Step 2 – Mix potatoes, salt, pepper, and olive oil in a large bowl
Step 3 – Spray baking sheets with cooking spray and spread potatoes out
Step 4 – Turn potatoes while baking until potatoes are lightly browned and tender
Step 5 – Remove potatoes and cool
Step 6 – Make the sauce by mixing Lone Tree BBQ sauce, mayonnaise, Dijon mustard, parsley, salt and pepper in a bowl and stirring until smooth
Step 7 – Mix potatoes, scallions, and bacon in a bowl
Step 8 – Pour sauce over potatoes and toss
Step 9 – Cover with plastic wrap and cool in the refrigerator
Step 10 – Toss and serve with a chopped parsley garnish
